Lemon Caper Cod
This cod is light, refreshing, and will melt in your mouth! Perfect for an easy weeknight dinner or to serve at a dinner party to impress your guests!

- 2 Cod fillets
- 2 tbsp Capers
- 3 tbsp Butter melted
- 2 cloves Garlic
- 1 Lemon juiced
- Paprika
- 2 tsp Italian Seasoning
- 1 tsp Red Pepper Flakes
- Salt
- Pepper
Preheat oven to 400℉ and line a baking sheet and set aside.
Pat your cod fillets dry and season with salt and pepper. Place in the lined baking tray and sprinkle paprika over the tops.
In a separate bowl, combine melted butter, lemon juice, garlic, italian seasoning, red pepper flakes, and capers and mix. Once combined, pour over the tops of the fish.
Place in the oven and cook for about 15 minutes, or until the fish flakes easily with a fork. Sprinkle parsley on top (if you want), serve with vegetables and/or rice and enjoy!
