Lemon Caper Cod

This cod is light, refreshing, and will melt in your mouth! Perfect for an easy weeknight dinner or to serve at a dinner party to impress your guests!

Ingredients
  

  • 2 Cod fillets
  • 2 tbsp Capers
  • 3 tbsp Butter melted
  • 2 cloves Garlic
  • 1 Lemon juiced
  • Paprika
  • 2 tsp Italian Seasoning
  • 1 tsp Red Pepper Flakes
  • Salt
  • Pepper

Instructions
 

  • Preheat oven to 400℉ and line a baking sheet and set aside.
  • Pat your cod fillets dry and season with salt and pepper. Place in the lined baking tray and sprinkle paprika over the tops.
  • In a separate bowl, combine melted butter, lemon juice, garlic, italian seasoning, red pepper flakes, and capers and mix. Once combined, pour over the tops of the fish.
  • Place in the oven and cook for about 15 minutes, or until the fish flakes easily with a fork. Sprinkle parsley on top (if you want), serve with vegetables and/or rice and enjoy!
