First peel and devein your shrimp if they aren't already. Pat dry and toss them with salt, pepper, lime juice, paprika, garlic, and chili powder. Over some olive oil, cook on medium heat for about 4 minutes or until shrimp is pink and curling.

While the shrimp is cooking, fry your tortillas. Heat oil on medium high heat and add tortillas. Cook only for a few seconds on each side, until crispy. You can also crisp them in the oven on broil, just brush with a little oil.
If you want to make a chipotle crema, mix together chipotle, sour cream, lime, salt, and a little garlic. Add seasonings to taste.
Once tortillas have cooled, spread avocado over it. Add your shrimp on top, and whatever other toppings you choose!
